Ingredients
- Penne pasta12 oz
- Chicken breast1 lb, cut into bite-sized pieces
- Sun-dried tomatoes1/2 cup, chopped (oil-packed, drained)
- Garlic3 cloves, minced
- Chicken broth3 cups
- Heavy cream1 cup
- Fresh spinach3 cups, packed
- Olive oil1 tbsp
- Italian seasoning1 tsp
- Saltto taste

Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken pieces and cook until lightly browned on all sides. Remove chicken and set aside.

Add minced garlic and chopped sun-dried tomatoes to the pot and sauté for 1 minute until fragrant.

Pour in chicken broth and heavy cream. Add penne pasta, Italian seasoning, salt, and pepper. Bring to a simmer.

Return the chicken to the pot. Reduce heat to medium-low, cover, and simmer, stirring occasionally, until pasta is al dente and sauce has thickened, about 12-15 minutes.
