Ingredients
- Potatoes (Desiree or similar all-purpose)1kg
- Vegetable oil or Lard3 tbsp
- Garlic powder1 tsp
- Paprika1 tsp
- Saltto taste
- Black pepperto taste

Cut the potatoes into 1-inch cubes.

Place the potato cubes in a pan of cold, salted water. Bring to the boil and cook for 10-12 minutes until fork-tender but not falling apart.

Drain the potatoes very well. Let them steam dry for a few minutes.

Heat the oil or lard in a large, heavy-based frying pan or skillet over medium-high heat until hot.

Add the drained potatoes to the hot pan in a single layer. Try not to overcrowd the pan; cook in batches if necessary.

Fry for 5-7 minutes per side, without stirring too much, until golden brown and crispy.

Sprinkle with garlic powder, paprika, salt, and pepper. Toss to coat.
