Ingredients
- Cheddar cheese250g
- Ale or stout150ml
- Worcestershire sauce2 tbsp
- Mustard powder1 tsp
- Egg yolk1
- Sourdough bread4 thick slices
- Butterfor toasting
- Saltto taste
- Black pepperto taste
- Paprikafor garnish

Grate the cheddar cheese.

In a saucepan, combine the grated cheese, ale, Worcestershire sauce, and mustard powder.

Heat gently over a low heat, stirring constantly until the cheese is melted and the sauce is smooth and thick. Do not boil.

Remove from heat and stir in the egg yolk. Mix well until fully incorporated.

Toast the sourdough bread slices until golden brown.

Butter the toast lightly.

Pour the cheese sauce generously over the toasted bread.
