  • Chorizo sausage meat400g
  • Puff pastry2 sheets (approx. 320g)
  • Egg, beaten (for egg wash)1
  • Red onion, finely chopped1/4
  • Smoked paprika1 tsp
  • Chili flakes1/2 tsp (or to taste)
  • Fresh parsley, chopped (for garnish)1 tbsp
  • Saltpinch (chorizo is salty)
  • Black pepperto taste

Steps

    Preheat oven to 200°C (180°C fan/Gas Mark 6). Line a baking sheet with parchment paper.

    In a bowl, combine the chorizo sausage meat, finely chopped red onion, smoked paprika, chili flakes, salt (use sparingly as chorizo is salty), and pepper.

    Unroll the puff pastry sheets. Cut each sheet in half lengthwise.

    Divide the chorizo mixture into four portions. Shape each into a long log and place on one half of each pastry strip.

    Brush the opposite edge of the pastry with egg wash. Fold the pastry over the filling and press to seal.

    Trim and seal the edges firmly with a fork. Cut each roll into 3 pieces.

    Place on the baking sheet, brush with egg wash, and sprinkle with parsley.

    Bake for 20-25 minutes, until golden brown and cooked through.
