  • Bok choy2 heads, chopped
  • Shiitake mushrooms4 oz, sliced
  • Scallions4, sliced
  • Saltto taste

  • Fresh cilantro1/4 cup, chopped
  • Chili oilfor drizzling

Steps

    In a large pot, combine chicken thighs, chicken broth, ginger, smashed garlic, soy sauce, and sesame oil. Bring to a boil.

    Reduce heat, cover, and simmer for 20 minutes, or until chicken is cooked through. Remove chicken and shred. Discard ginger and garlic.

    Return broth to a simmer. Add sliced shiitake mushrooms and chopped bok choy. Cook for 5 minutes.
