Ingredients
- Chicken thighs1 lb
- Chicken broth8 cups
- Fresh ginger2 inch piece, sliced
- Garlic cloves3, smashed
- Soy sauce1/4 cup
- Sesame oil1 tbsp
- Ramen noodles8 oz
- Bok choy2 heads, chopped
- Shiitake mushrooms4 oz, sliced
- Scallions4, sliced
- Saltto taste

- Fresh cilantro1/4 cup, chopped
- Chili oilfor drizzling

In a large pot, combine chicken thighs, chicken broth, ginger, smashed garlic, soy sauce, and sesame oil. Bring to a boil.

Reduce heat, cover, and simmer for 20 minutes, or until chicken is cooked through. Remove chicken and shred. Discard ginger and garlic.

Return broth to a simmer. Add sliced shiitake mushrooms and chopped bok choy. Cook for 5 minutes.

Add ramen noodles and cook according to package directions.

Stir in shredded chicken and sliced scallions. Heat through for 2 minutes.
