Ingredients
- Whole chicken1 (3-4 lb)
- Lemon2
- Fresh rosemary2 sprigs
- Fresh thyme3 sprigs
- Dried oregano1 tsp
- Garlic3 cloves
- Kalamata olives1/2 cup
- Cherry tomatoes1 cup
- Olive oil3 tbsp
- Salt1 tsp
- Black pepper1/2 tsp

Preheat oven to 400°F (200°C).

Pat the chicken dry.

Cut one lemon into quarters. Slice the other lemon thinly.

Mince garlic. Chop rosemary and thyme.

In a bowl, combine olive oil, minced garlic, chopped herbs, dried oregano, salt, and pepper.

Rub the mixture all over the chicken.

Stuff the chicken cavity with lemon quarters and half of the olives.

Place chicken in a roasting pan. Scatter cherry tomatoes and remaining olives around the chicken.

Roast for 20 minutes at 400°F (200°C).

Reduce oven temperature to 375°F (190°C). Continue roasting for another 40-50 minutes, or until chicken reaches 165°F (74°C). Baste with pan juices occasionally.
