Ingredients
- Yukon Gold potatoes2 lbs
- Butter4 tbsp
- All-purpose flour1/4 cup
- Milk2 cups
- Heavy cream1 cup
- Smoked Gouda cheese, shredded1.5 cups
- Gruyere cheese, shredded0.5 cup
- Dijon mustard1 tbsp
- Salt1 tsp
- Black pepper1/2 tsp
- Crispy fried onions1 cup
- Fresh thyme (for garnish)1 tbsp

Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

Peel and thinly slice the potatoes (about 1/8 inch thick).

In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.

Gradually whisk in milk and heavy cream until smooth. Bring to a simmer, stirring, until thickened.

Remove from heat. Stir in shredded smoked Gouda, Gruyere, and Dijon mustard until cheeses are melted. Season with salt and pepper.

Layer half of the potato slices in the prepared baking dish. Pour half of the cheese sauce over the potatoes.

Layer the remaining potato slices and pour the rest of the cheese sauce over them.
