Ingredients
- Cod fillets500g
- Potatoes500g
- Butter30g
- Milk50ml
- Fresh parsley2 tbsp, chopped
- Egg1, beaten
- All-purpose flour50g
- Vegetable oilfor frying
- Saltto taste
- Black pepperto taste

Boil the potatoes until tender, then mash them with butter and milk until smooth.

Gently poach the cod fillets in water until just cooked. Drain and flake the fish, removing any bones or skin.

In a bowl, combine the mashed potatoes, flaked cod, chopped parsley, salt, and pepper. Mix well.

Divide the mixture into portions and shape them into flat cakes.

Prepare three shallow dishes: one with flour, one with the beaten egg, and one with breadcrumbs (optional, for extra crispiness).

Coat each fish cake first in flour, then dip in the beaten egg, and finally coat with breadcrumbs if using.

Heat vegetable oil in a frying pan over medium-high heat. Fry the fish cakes for 3-4 minutes per side, until golden brown and heated through.
