- Canned cod, drained300g
- Instant mashed potato flakes150g

- Milk2 tbsp
- Fresh chives, chopped1 tbsp
- Egg1, beaten
- All-purpose flour50g

Prepare instant mashed potatoes according to package directions, using hot water and milk. Let cool slightly.

Flake the canned cod into small pieces. Remove any bones.

In a bowl, combine the mashed potatoes, flaked cod, chopped chives, salt, and pepper. Mix gently.

Shape the mixture into small, flat cakes.

Lightly dredge each cake in flour, then dip in beaten egg.

Heat olive oil in a non-stick pan over medium heat. Fry the fish cakes for 2-3 minutes per side until golden.
