Ingredients
- Fine bulgur wheat1/2 cup
- Fresh parsley, finely chopped4 cups
- Fresh mint, finely chopped1 cup
- Tomatoes, finely diced2 medium
- Green onions, finely chopped4
- Lemon juice1/4 cup
- Extra virgin olive oil1/4 cup
- Saltto taste
- Black pepperto taste

Rinse the bulgur wheat and soak in cold water for 10-15 minutes until softened. Drain thoroughly and squeeze out any excess water.

In a large bowl, combine the finely chopped parsley, mint, diced tomatoes, and chopped green onions.

Add the drained bulgur wheat to the bowl.

In a small bowl, whisk together the lemon juice and extra virgin olive oil. Season with salt and pepper.

Pour the dressing over the salad ingredients and toss gently to combine. Adjust seasoning if needed.

Let the tabbouleh sit for at least 15 minutes to allow the flavors to meld before serving.
