Ingredients
- Tapioca flour (sour)2 cups
- Milk1/2 cup
- Vegetable oil1/4 cup
- Eggs2 large
- Grated Parmesan cheese1/2 cup
- Grated Minas cheese (or mozzarella)1/2 cup
- Salt1 teaspoon

Preheat oven to 375°F (190°C). Grease a mini muffin tin or line a baking sheet.

In a saucepan, heat milk, oil, and salt until just simmering. Pour this mixture over the tapioca flour in a large bowl and mix well until combined. Let it cool slightly.

Once the mixture is cool enough to handle, add the eggs one at a time, mixing well after each addition until a smooth, sticky dough forms.

Stir in the grated cheeses until evenly distributed.

Roll the dough into small balls (about 1-inch diameter) and place them on the prepared baking sheet or in the mini muffin tin.
