Ingredients
- all-purpose flour3 cups

- ground beef1.5 lbs
- onion, finely chopped1 medium
- garlic, minced3 cloves
- scotch bonnet pepper, minced (seeds removed for less heat)1

- allspice, ground1 teaspoon
- beef bouillon cube, crumbled1
- brown sugar1 teaspoon
- vegetable oil2 tablespoons
- egg, beaten (for wash)1

For the dough: Whisk together flour, turmeric, and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water, mixing until dough just comes together. Divide into 12 portions, flatten into discs, wrap, and chill for at least 30 minutes.

For the filling: Heat vegetable oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and scotch bonnet pepper, cook for 1 minute more.

Add ground beef to the skillet. Break it up with a spoon and cook until browned. Drain off excess fat.

Stir in thyme, curry powder, allspice, crumbled bouillon cube, and brown sugar. Cook for 2-3 minutes, stirring constantly, until fragrant.

Let the filling cool completely.

Preheat oven to 400°F (200°C). Line baking sheets with parchment paper.

On a lightly floured surface, roll out each dough disc into a circle about 6-7 inches in diameter.

Spoon about 1/4 cup of the cooled beef filling onto one half of each dough circle, leaving a border.

Fold the other half of the dough over the filling to create a semi-circle. Crimp the edges firmly with a fork or by folding and pressing to seal.

Place patties on the prepared baking sheets. Brush the tops with the beaten egg wash.

Bake for 20-25 minutes, or until the crust is golden brown and firm.
