Ingredients
- Pork belly1 kg
- Tamarind pulp100g
- Daikon radish1 medium
- Taro root2 medium
- Long beans1 bunch
- Bok choy1 head
- Tomatoes2 medium
- Onion1 medium
- Fish sauce3 tbsp
- Siling haba (long green chili)2-3
- Saltto taste
- Black pepperto taste
- Water2 liters

Boil pork belly in water until tender, skimming off impurities. Reserve broth.

In a separate pot, boil tamarind pulp in water, mash, and strain to get tamarind juice. Discard solids.

Add pork belly and broth to a clean pot. Add sliced tomatoes and onion. Bring to a boil.

Add daikon radish and taro root. Simmer until tender.

Add long beans and siling haba. Cook for a few minutes.

Pour in tamarind juice. Season with fish sauce, salt, and pepper to taste. Adjust sourness as needed.

Add bok choy leaves and stems. Cook until wilted.
