In a bowl, whisk eggs. In a separate shallow dish, combine cornstarch and flour.

Dredge chicken pieces first in the egg mixture, then in the cornstarch and flour mixture, ensuring they are fully coated.

Heat vegetable oil in a deep pan or wok over medium-high heat. Fry chicken in batches until golden brown and cooked through (about 5-7 minutes). Drain on paper towels.

While chicken is frying, prepare the sauce: In a bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, rice vinegar, sesame oil, and garlic powder until smooth.
