
Classic Dubai Chocolate Strawberries

Ingredients
- Fresh strawberries1 lb
- High-quality dark chocolate (70% cocoa)10 oz
- High-quality white chocolate2 oz
- Edible gold leaf (optional)1 sheet
- Coconut oil or vegetable shortening1 tsp
- Saltpinch

Wash and thoroughly dry the strawberries. Ensure they are completely dry, as water can seize the chocolate.

Melt the dark chocolate. You can use a double boiler or microwave in 30-second intervals, stirring in between. Stir in 1 tsp of coconut oil or shortening to help achieve a smooth, glossy finish.

Temper the dark chocolate using your preferred method (e.g., seeding method, direct tempering). This ensures a snap and shine.

Dip each strawberry into the tempered dark chocolate, coating about two-thirds of the way up. Let excess chocolate drip off.

Place the chocolate-covered strawberries on a parchment-lined baking sheet.

Melt the white chocolate separately, using the same method as the dark chocolate. If desired, add a tiny bit of coconut oil for smoothness.

Transfer the melted white chocolate to a piping bag or a small zip-top bag with a corner snipped off. Drizzle the white chocolate over some of the dark chocolate-covered strawberries.

If using edible gold leaf, carefully apply small pieces to some of the strawberries while the chocolate is still slightly soft.

Allow the chocolate to set completely at room temperature or in the refrigerator for about 15-20 minutes.
