Boil potatoes until tender, then peel and dice them.

Cook wide egg noodles according to package directions until al dente. Drain.

Finely chop the onions.

Melt butter in a large skillet over medium heat. Add onions and cook slowly until deeply caramelized and golden brown.

Add the diced potatoes to the skillet with the onions and cook for about 5-7 minutes, stirring occasionally, until lightly browned.

Add the cooked noodles to the skillet. Season generously with salt and pepper. Toss everything together and cook for another 5-10 minutes, stirring frequently, until the noodles and potatoes are heated through and slightly crispy.
