- Smoked bacon150g
- Butter20g
- Fresh parsley, chopped2 tbsp
- Fresh chives, chopped1 tbsp

Boil potatoes until tender, then peel and dice them.

Cook wide egg noodles according to package directions until al dente. Drain.

Dice the smoked bacon into small pieces.

In a large skillet, cook the bacon pieces over medium heat until crispy. Remove bacon with a slotted spoon and set aside, leaving the rendered fat in the skillet. Add butter if needed.

Add the diced potatoes to the skillet with the bacon fat and cook for about 5-7 minutes, stirring occasionally, until lightly browned.

Add the cooked noodles to the skillet. Add the crispy bacon back into the pan. Season generously with salt and pepper. Toss everything together and cook for another 5-10 minutes, stirring frequently, until heated through and slightly crispy.

Stir in the chopped fresh parsley and chives just before serving.
