- Tomato passata400g
- Vegetable broth1 liter
- Onion1 small
- Garlic1 clove
- Parmesan cheese40g
- Olive oil2 tbsp
- Fresh parsleya little
- Saltto taste
- Black pepperto taste

Finely chop the onion and mince the garlic.

Heat olive oil in a wide pan over medium heat. Sauté the onion until softened, about 3-4 minutes.

Add the minced garlic and cook for 30 seconds.

Add the Arborio rice and toast for 1 minute, stirring.

Pour in the tomato passata and about half of the warm vegetable broth. Stir well.

Bring to a simmer and cook, stirring occasionally, for about 15-20 minutes, adding the remaining broth as needed, until the rice is cooked through and the risotto is creamy.

Remove from heat. Stir in the grated Parmesan cheese. Season with salt and black pepper.

Serve immediately, garnished with fresh parsley.
