  • Black pepper0.5 tsp

    Activate yeast: In a small bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until foamy.

    In a large bowl, combine bread flour and salt. Make a well in the center.

    Pour the activated yeast mixture and extra virgin olive oil into the well. Mix until a shaggy dough forms.

    Turn dough onto a lightly floured surface and knead for 10-12 minutes until smooth and elastic.

    Knead in the chopped Kalamata olives, chopped rosemary, and black pepper until evenly distributed.

    Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1-1.5 hours, or until doubled in size.

    Punch down the dough and shape it into a round loaf. Place on a baking sheet lined with parchment paper.

    Cover and let rise for another 30 minutes.

    Preheat oven to 200°C (400°F).
