
Traditional Pogačice sa Sirom (Cheese Pastries)

Classic Serbian cheese pastries, flaky and savory, made with a rich dough filled with crumbled feta cheese. Perfect as a snack or appetizer.

- All-purpose flour500g
- Butter, cold and cubed250g
- Feta cheese, crumbled200g
- Egg yolk1
- Sour cream100g
- Salt1 tsp
- Black pepper1/2 tsp
- Egg wash (1 egg beaten)1
- Sesame seeds (optional)2 tbsp

In a large bowl, combine flour and salt. Cut in cold butter until the mixture resembles coarse crumbs.

In a separate small bowl, whisk together egg yolk and sour cream. Add this to the flour mixture and mix until a dough forms. Do not overmix.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Preheat oven to 200°C (400°F). Line baking sheets with parchment paper.

On a lightly floured surface, roll out the dough to about 0.5 cm thickness.

Spread the crumbled feta cheese evenly over half of the dough. Season with black pepper.

Fold the other half of the dough over the cheese filling. Gently press down.

Cut the dough into small squares or desired shapes (pogačice).

Place the pogačice on the prepared baking sheets. Brush the tops with egg wash and sprinkle with sesame seeds if desired.

Bake for 15-20 minutes, or until golden brown and puffed.
