Activate yeast: In a small bowl, combine warm milk and 1 tsp of granulated sugar. Sprinkle yeast over the top and let it sit for 5-10 minutes until foamy.

In a large bowl, whisk together flour, remaining granulated sugar, and salt.

In a separate bowl, whisk eggs and vanilla extract. Then whisk in the melted butter.

Pour the foamy yeast mixture and the egg-butter mixture into the dry ingredients. Stir until just combined. The batter will be quite thick.

Cover the bowl with plastic wrap and let the dough rise in a warm place for about 1 hour, or until doubled in size.

Preheat your waffle iron according to manufacturer's instructions.

Grease the waffle iron if necessary. Pour about 1/2 cup of batter onto the hot waffle iron and cook until golden brown and crisp, usually 3-5 minutes.
