The quintessential Swiss potato pancake, made from grated raw potatoes, pan-fried until golden brown and crispy on the outside, with a tender interior. A staple of Swiss cuisine.

Peel the potatoes and grate them using the coarse side of a grater.

Squeeze out as much moisture as possible from the grated potatoes using a clean kitchen towel or cheesecloth.

Season the grated potatoes with salt and pepper.

Melt 2 tablespoons of butter in a large non-stick skillet over medium-high heat.

Add the grated potatoes to the skillet, pressing them down to form an even layer. Do not stir.

Cook for 10-15 minutes, until the bottom is golden brown and crispy. Loosen the edges with a spatula.

Carefully flip the rösti using a plate or a large spatula. Add the remaining 2 tablespoons of butter to the skillet.

Slide the rösti back into the skillet and cook the other side for another 10-15 minutes until golden brown and cooked through.

Slide the finished rösti onto a serving plate. Slice and serve immediately.
