- Toasted Hazelnuts (chopped)100g

Bake puff pastry: Prepare and bake two puff pastry sheets as per the classic recipe. Let cool.

Make chocolate custard base: Heat 700ml milk with 230g sugar. Whisk yolks, cornstarch, remaining milk (200ml), and vanilla. Temper and cook until thick. Remove from heat.

Incorporate chocolate and nuts: Stir in the chopped dark chocolate and butter until melted and smooth. Fold in half of the chopped toasted hazelnuts. Add salt.

Assemble: Spread the chocolate hazelnut custard over one baked pastry sheet. Sprinkle the remaining chopped hazelnuts over the custard.

Top and chill: Place the second pastry sheet on top. Refrigerate for at least 3 hours until firm. Dust with powdered sugar before slicing.
