Prepare the filling: Peel and boil potatoes until tender. Mash them thoroughly. Finely chop onions and mushrooms. Sauté onions in butter until softened, then add mushrooms and cook until browned and moisture has evaporated. Mix mashed potatoes with sautéed mushrooms and onions. Season with salt and pepper.

Make the dough: Combine flour, eggs, water, and salt in a large bowl. Mix until a cohesive dough forms. Knead on a floured surface for about 5-7 minutes until smooth and elastic.

Assemble the dumplings: Roll out the dough thinly (about 1/8 inch thick). Cut out circles using a glass or cookie cutter. Place a teaspoon of filling in the center of each circle. Fold the dough in half to create a crescent shape, pressing the edges firmly to seal.

Boil the dumplings: Bring a large pot of salted water to a rolling boil. Carefully add the dumplings in batches, ensuring not to overcrowd the pot. Cook for 5-7 minutes after they float to the surface, or until the dough is cooked through.

Serve: Remove dumplings with a slotted spoon. Serve hot, topped with a dollop of sour cream and a sprinkle of fresh dill. Optionally, drizzle with melted butter or sautéed onions.
