Sastojci
- Sauerkraut750 g
- Canned cannellini beans, drained and rinsed400 g
- Pancetta or smoked bacon, diced150 g
- Onion1 medium
- Garlic2 cloves
- Carrot1 small
- Tomato paste1 tbsp
- Bay leaf1
- Saltto taste
- Black pepperto taste
- Water or vegetable broth1 liter

Rinse the sauerkraut and chop if necessary.

Finely chop the onion, garlic, and carrot.

In a large pot, sauté the diced pancetta until crispy. Remove pancetta and set aside, leaving the rendered fat in the pot.

Add the chopped onion, garlic, and carrot to the pot and sauté until softened, about 5-7 minutes.

Stir in the tomato paste and cook for 1 minute.

Add the rinsed sauerkraut, drained beans, bay leaf, and water or broth to the pot.

Bring to a boil, then reduce heat and simmer for at least 45 minutes, allowing flavors to meld.

Stir in the cooked pancetta. Season with salt and pepper to taste. Remove bay leaf.
