
Fritaja s tartufima (Traditional Istrian Truffle Omelette)

A classic Istrian fritaja, this is a simple yet elegant omelette showcasing the earthy aroma and flavor of fresh truffles, typically made with eggs, truffles, and a touch of local olive oil or butter.

- Fresh Black Truffle5-10g
- Butter or Olive Oil1 tbsp
- Saltto taste
- Black Pepperto taste
- Fresh Parsleyfor garnish

Finely shave or grate the fresh black truffle.

In a bowl, whisk the eggs with salt and pepper until well combined.

Gently fold about half of the shaved truffle into the whisked eggs.

Heat the butter or olive oil in a non-stick skillet over medium heat.

Pour the egg mixture into the hot skillet.

Cook the omelette, gently lifting the edges and tilting the pan to allow uncooked egg to flow underneath. Cook until the bottom is set and the top is almost set.

Fold the omelette in half or roll it, if desired.

Slide the fritaja onto a plate. Garnish with the remaining fresh truffle shavings, a drizzle of olive oil, and fresh parsley.
