In a large pot, combine beef bones, beef chuck, water, onion (halved), bay leaves, and peppercorns. Bring to a boil, then reduce heat and simmer for 2 hours, skimming foam.

Peel and chop carrots, parsley root, celery root, parsnip, and garlic. Add them to the pot during the last hour of simmering.

While the broth simmers, prepare the noodles: Whisk eggs with salt. Gradually add flour to form a stiff dough. Knead briefly and let rest for 30 minutes.

Roll out the dough thinly and cut into fine noodles. Let them dry slightly.

Remove beef and bones from the broth. Strain the broth. Shred or dice the cooked beef.

Bring the strained broth back to a boil. Add the homemade noodles and cook for 3-5 minutes.

Add the cooked beef and chopped vegetables back into the soup.
