Heat olive oil in a pot over medium heat. Sauté shallots until softened, about 3-4 minutes.

Add garlic and mushrooms, cook until mushrooms are tender and browned, about 8-10 minutes.

Pour in the vegetable broth and bring to a simmer.

In a small bowl, whisk cornstarch with milk until smooth. Pour this mixture into the simmering soup, stirring constantly until thickened.
