
Adriatic Style Fish Soup (Brodet)

Inspired by coastal Croatian brodet, this fish soup uses a mix of seafood, white wine, tomatoes, and herbs, often served with polenta or crusty bread. It has a lighter, more Mediterranean feel.

- Assorted firm white fish (monkfish, sea bass, snapper)700g
- Shrimp200g
- Mussels200g
- Onions2 large
- Garlic4 cloves
- Tomatoes (canned or fresh)400g
- Bell pepper (red)1
- White wine (dry)200 ml
- Fish stock or water1 liter
- Olive oil3 tbsp
- Parsley1 bunch
- Rosemary or thyme1 sprig
- Saltto taste
- Black pepperto taste

Cut fish into large chunks. Clean shrimp and mussels.

In a wide, shallow pot, heat olive oil and sauté chopped onions until softened.

Add minced garlic and chopped bell pepper, cook for 5 minutes.

Add chopped tomatoes, fish stock/water, white wine, and herbs. Bring to a simmer.

Add fish pieces and cook for 10 minutes.

Add shrimp and mussels. Cover and cook for another 5-7 minutes, until shrimp are pink and mussels have opened.

Discard any unopened mussels. Season with salt and pepper.

Stir in most of the chopped parsley. Serve hot in bowls, garnished with remaining parsley and a drizzle of olive oil.
