- White Wine Vinegar4 tbsp
- Chicken Broth100 ml
- Sugar1 tsp
- Fresh Parsley2 tbsp, chopped

Boil potatoes in their skins in salted water until tender. Drain and let cool slightly.

While potatoes are cooking, fry the diced bacon in a pan until crisp. Remove bacon bits and set aside, leaving bacon fat in the pan.

Add the finely chopped onion to the bacon fat and sauté until softened.

Add white wine vinegar, chicken broth, and sugar to the pan. Bring to a simmer and cook for 2-3 minutes to create a warm vinaigrette. Season with salt and pepper.

Peel the slightly cooled potatoes and slice them into rounds or cubes.

Place the sliced potatoes in a bowl. Pour the warm vinaigrette over them.
