- Eggplant500 g

- Vegetable oil50 ml

Roast the red bell peppers and eggplant until charred. Peel the peppers and eggplant. Discard seeds from peppers.

Finely chop or process the roasted peppers and eggplant. Mince the garlic and chili pepper.

Heat vegetable oil in a large pot over medium heat. Add the chopped vegetables, garlic, and chili. Cook, stirring frequently, for at least 2-3 hours, or until the mixture thickens considerably and the flavors meld. Stir often to prevent sticking.

Season with salt and black pepper to taste. Continue cooking for another 15-30 minutes.

Let cool completely before serving or storing.
