Sastojci
- Jarred roasted red peppers500 g
- Eggplant500 g
- Garlic2-3 cloves
- Chili pepper (optional)1/2
- Olive oil3 tbsp
- Vinegar (white wine)1 tbsp
- Saltto taste
- Black pepperto taste

Roast or boil the eggplant until very soft. Drain any excess water.

Drain the jarred roasted red peppers and pat them dry.

Process the eggplant and peppers in a food processor until you reach a desired consistency (smoother than classic).

Mince the garlic and chili pepper (if using).

In a bowl, combine the processed vegetables, minced garlic, and chili. Stir in olive oil and vinegar.

Season with salt and black pepper to taste.

Mix well and let it sit for at least 15 minutes for flavors to combine before serving.
