- Unsalted butter180g
- Shallots2 medium

- Fresh rosemary1 sprig
- Balsamic vinegar150ml
- Honey1 tbsp
- Saltto taste
- Black pepperto taste

Clean the chicken livers. Finely chop the shallots and garlic.

Melt 40g of butter in a skillet over medium heat. Add shallots and cook until softened, about 5 minutes.

Add garlic and rosemary sprig, cook for 1 minute until fragrant.

Add chicken livers and cook for 3-4 minutes per side until browned but still pink inside.

Remove from heat. Discard rosemary sprig.

In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat and cook until reduced to a syrupy glaze, about 10-15 minutes.

Transfer the liver mixture to a food processor. Add the remaining 140g of cold butter, cut into cubes.

Process until very smooth. Season with salt and pepper.

Spoon the pâté into serving dishes. Drizzle generously with the balsamic glaze.

Garnish with microgreens. Chill for at least 2 hours before serving.
