
Traditional Varivo od Poriluka (Leek Stew)

A hearty and comforting traditional Croatian stew made primarily with leeks, potatoes, and a touch of smoked meat for depth. This is a staple dish, known for its simple yet satisfying flavors.

Sastojci

- Potatoes500 g
- Smoked Pork Belly or Bacon150 g
- Onion1 medium
- Garlic2 cloves
- Vegetable Broth or Water750 ml
- All-purpose Flour2 tbsp
- Olive Oil or Lard2 tbsp
- Saltto taste
- Black Pepperto taste
- Fresh Parsleyfor garnish

Clean the leeks thoroughly, trim the dark green tops and roots, and slice them into 1 cm thick rounds. Wash again to remove any grit.

Peel and dice the potatoes into 2 cm cubes.

Dice the smoked pork belly or bacon.

Finely chop the onion and mince the garlic.

In a large pot or Dutch oven, heat the olive oil or lard over medium heat. Add the diced smoked pork and cook until crispy. Remove the pork with a slotted spoon and set aside, leaving the rendered fat in the pot.

Add the chopped onion to the pot and sauté until softened, about 5 minutes.

Add the minced garlic and cook for another minute until fragrant.

Add the sliced leeks to the pot and cook, stirring occasionally, until they are wilted and tender, about 10-15 minutes.

Sprinkle the flour over the leeks and stir well to coat. Cook for 1-2 minutes to toast the flour.

Gradually pour in the vegetable broth or water, stirring constantly to avoid lumps. Bring the mixture to a simmer.

Add the diced potatoes to the pot. Season with salt and black pepper.

Bring the stew back to a simmer, then reduce the heat to low, cover, and cook for 20-25 minutes, or until the potatoes are tender and the stew has thickened.

Stir in the reserved crispy smoked pork.

Taste and adjust seasoning with salt and pepper if needed.
