- Potatoes400 g
- Vegetable Broth600 ml
- Garlic1 clove
- Olive Oil1 tbsp
- Saltto taste

Clean and slice the leeks into rounds. Peel and dice the potatoes into small cubes.

Mince the garlic.

Heat olive oil in a pot over medium heat. Add the sliced leeks and cook until softened, about 7-10 minutes.

Add the minced garlic and cook for 1 minute until fragrant.

Add the diced potatoes and vegetable broth to the pot. Season with salt and pepper.

Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes, or until potatoes are tender.

Mash some of the potatoes against the side of the pot to thicken the stew slightly, or simmer uncovered for a few extra minutes.
