- Sweet paprika2 tbsp
- All-purpose flour2 tbsp
- Beef broth500ml
- Tomato paste1 tbsp
- Vegetable oil2 tbsp

Cut beef into 2-3 cm cubes. Season with salt and pepper.

Finely chop onions and mince garlic.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Sear beef cubes on all sides until browned. Remove beef and set aside.

Add chopped onions to the pot and sauté until softened and translucent, about 8-10 minutes.

Stir in minced garlic and cook for 1 minute until fragrant.

Add sweet paprika and flour to the pot. Stir well and cook for 1-2 minutes, stirring constantly, to form a roux.

Gradually whisk in beef broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer.

Stir in tomato paste and bay leaf.

Return the seared beef to the pot. Ensure the beef is mostly submerged in the sauce. Add water if needed.

Bring the mixture to a gentle simmer, then reduce heat to low, cover, and cook for at least 1.5 to 2 hours, or until the beef is very tender. Stir occasionally and add more water or broth if the sauce becomes too thick.

Remove the bay leaf. Season with salt and pepper to taste.
