
Classic Beef Steak with Green Peppercorn Sauce

- Butter50g
- Olive oil2 tbsp
- Shallots, finely chopped2
- Green peppercorns, drained2 tbsp
- Brandy50ml
- Beef broth200ml
- Heavy cream150ml
- Saltto taste
- Black pepperto taste

Pat the steaks dry and season generously with salt and black pepper.

Heat olive oil and 1 tbsp butter in a skillet over medium-high heat. Sear steaks for 3-4 minutes per side for medium-rare, or to your desired doneness.

Remove steaks from the skillet and let them rest on a plate, tented with foil.

Reduce heat to medium. Add the remaining 1 tbsp butter to the skillet. Add chopped shallots and sauté until softened, about 2-3 minutes.

Pour in the brandy and let it bubble and reduce by half, scraping up any browned bits from the bottom of the pan.

Add the beef broth and drained green peppercorns. Bring to a simmer and cook for 5 minutes.

Stir in the heavy cream and simmer gently until the sauce thickens slightly, about 3-5 minutes. Season with salt and pepper to taste.
