Finely mince garlic.

In a large bowl, combine ground beef and ground lamb. Add minced garlic, salt, and black pepper. Mix thoroughly with your hands until well combined.

Gradually add sparkling water while mixing, to help bind the meat and create a tender texture.

Cover the bowl and refrigerate for at least 2 hours, or preferably overnight, to allow flavors to meld.

Soak wooden skewers in water for at least 30 minutes to prevent burning.

Divide the meat mixture into 8-10 equal portions. Shape each portion into a long, cylindrical skewer, about 15-20 cm long and 2-3 cm thick. Thread the meat onto the soaked skewers.

Preheat grill to medium-high heat. Grill the ćevapi for about 8-12 minutes, turning occasionally, until evenly browned and cooked through with nice char marks.

Serve immediately with traditional accompaniments like chopped onions, ajvar, and somun bread.
