
Punjena Pljeskavica (Stuffed Balkan Burger)

A classic Balkan dish featuring a seasoned ground meat patty (usually a mix of beef and pork) stuffed with cheese and/or cured meat, then grilled to perfection. This version is the traditional, hearty preparation.

- Kajmak (Balkan clotted cream)150g
- White cheese (like Feta or local white cheese)100g
- Onion, finely chopped1 medium
- Garlic, minced2 cloves

In a large bowl, combine ground beef, ground pork, chopped onion, minced garlic, paprika, salt, and pepper. Mix thoroughly with your hands until well combined. Add 2 tbsp of water to help bind the meat.

Divide the meat mixture into 4 equal portions. Flatten each portion into a patty shape.

Prepare the stuffing: In a small bowl, mix the kajmak and crumbled white cheese.

Place a generous spoonful of the cheese and kajmak mixture onto the center of two of the flattened patties. Cover with the remaining two patties, and carefully seal the edges by pinching them together to form a stuffed patty. Ensure no stuffing can leak out.

Preheat your grill or a grill pan to medium-high heat.

Grill the Punjena Pljeskavica for about 6-8 minutes per side, or until cooked through and nicely charred. The internal temperature should reach 71°C (160°F).
