
Traditional Istarska Maneštra

A hearty and flavorful Istrian bean and vegetable stew, slow-cooked to perfection with traditional smoked meats and seasonal vegetables. This is the quintessential Istarska maneštra.

- Dried white beans (e.g., Cannellini or Borlotti)300g
- Pork belly, smoked150g
- Beef or pork ribs, smoked150g
- Onion, large1

- Tomatoes, crushed or passata200ml
- Parsley, fresh1 bunch

Soak the dried beans overnight in plenty of water. Drain and rinse.

In a large pot, combine the soaked beans with the smoked pork belly and ribs. Cover with fresh water and bring to a boil. Skim off any foam. Reduce heat and simmer for about 1.5-2 hours, or until beans and meats are tender.

While the beans are cooking, finely chop the onion, garlic, carrots, and celery. Peel and dice the potatoes.

Once the beans and meats are tender, remove the smoked meats from the pot. Cut the pork belly into small cubes and shred the ribs. Set aside.

In a separate pan, heat the olive oil over medium heat. Sauté the chopped onion until softened, about 5-7 minutes. Add the garlic, carrots, and celery, and cook for another 5 minutes.

Add the sautéed vegetables to the pot with the beans. Add the diced potatoes and crushed tomatoes. Stir well.

Return the cooked smoked meats (cubed pork belly and shredded ribs) to the pot. Add the chopped fresh parsley (reserve some for garnish).

Season with salt and black pepper to taste. Continue to simmer for another 30-45 minutes, or until the vegetables and potatoes are fully cooked and the stew has thickened.
