
Traditional Pumpkin Risotto (Rižoto od bundeve)

A classic and comforting Croatian pumpkin risotto, rich with the sweet flavor of pumpkin and creamy Arborio rice, finished with Parmesan cheese.

- Pumpkin puree400g
- Vegetable broth1 liter
- Onion1 medium
- Garlic2 cloves
- White wine100ml
- Parmesan cheese50g
- Butter30g
- Olive oil2 tbsp
- Saltto taste
- Black pepperto taste
- Fresh parsleyfor garnish

Finely chop the onion and garlic.

In a large pan, heat olive oil and butter over medium heat. Sauté the onion until translucent, then add garlic and cook for another minute until fragrant.

Add the Arborio rice to the pan and toast for 1-2 minutes, stirring constantly, until the edges of the grains become translucent.

Pour in the white wine and stir until it is completely absorbed.

Add the pumpkin puree and stir to combine with the rice.

Begin adding the warm vegetable broth, one ladleful at a time, stirring continuously and waiting until each addition is almost fully absorbed before adding the next.

Continue this process for about 18-20 minutes, or until the rice is al dente and the risotto is creamy.

Remove the pan from the heat. Stir in the grated Parmesan cheese and a knob of butter. Season with salt and black pepper to taste.

Let the risotto rest for a minute before serving. Garnish with fresh parsley.
