- Sponge cake or Pound cake (sliced)300g
- Mascarpone cheese400g
- Heavy cream200ml
- Powdered sugar80g
- Espresso coffee (cooled)200ml
- Pistachios (shelled, unsalted)100g
- Cocoa powder (unsweetened)1 tbsp
- Vanilla extract1 tsp

Whip heavy cream until stiff peaks form. In a separate bowl, beat mascarpone with powdered sugar and vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture.

Roughly chop 100g of pistachios, reserving some for garnish.

Cut sponge cake into bite-sized pieces.

Dip cake pieces quickly into the cooled espresso.

Layer the dipped cake pieces in individual serving glasses or a small dish. Top with half of the mascarpone cream mixture and sprinkle with half of the chopped pistachios.

Repeat the layering process with the remaining cake, cream, and pistachios.

Chill for at least 1 hour before serving. Dust with cocoa powder and garnish with reserved pistachios just before serving.
