Bahan

  • Beef stew meat, cubed700 g
  • Coconut milk, full fat400 ml
  • Water100 ml
  • Lemongrass, bruised1 stalk
  • Kaffir lime leaves3 leaves
  • Tamarind paste, diluted1 tbsp
  • Gula Melaka (palm sugar)1 tsp
  • Saltto taste
  • Pre-made Malaysian curry paste (beef)4 tbsp
  • Vegetable oil2 tbsp
  • Black pepperto taste

Langkah

    Heat vegetable oil in a pot or Dutch oven over medium-high heat. Add the pre-made curry paste and sauté for 2-3 minutes until fragrant.

    Add the cubed beef stew meat and stir-fry until browned on all sides.

    Pour in the coconut milk and water. Add the bruised lemongrass stalk and kaffir lime leaves.

    Bring to a boil, then reduce heat to medium-low. Cover and simmer for 45-60 minutes, or until the beef is tender.

    Stir in the diluted tamarind paste and Gula Melaka. Season with salt and black pepper to taste.

    Simmer uncovered for another 10 minutes to allow the sauce to thicken slightly.
