- Coconut milk400ml
- Water150ml
- Shallots100g
- Garlic4 cloves
- Fresh red chilies8-10
- Dried chilies4-5
- Galangal1.5cm
- Lemongrass1 stalk
- Turmeric0.5cm
- Belacan (shrimp paste)0.5 tsp
- Kaffir lime leaves3 leaves
- Fresh pineapple chunks1 cup
- Saltto taste
- Black pepperto taste
- Cooking oil2 tbsp

Prepare the chili paste: Soak dried chilies. Blend fresh red chilies, soaked dried chilies, shallots, garlic, belacan, galangal, lemongrass (bottom part), and turmeric into a smooth paste.

Heat cooking oil in a pot over medium heat. Add the chili paste and sauté until fragrant and oil separates.

Add the smoked duck pieces and stir to coat. Cook for 5 minutes.

Pour in coconut milk and water. Add kaffir lime leaves. Bring to a simmer.

Add pineapple chunks. Reduce heat and simmer gently for 25-30 minutes, allowing flavors to meld.
