- All-purpose flour50g
- Cooking oil2 tbsp
- Sweet chili sauce4 tbsp
- Ketchup2 tbsp
- Lime juice2 tbsp
- Sugar1 tbsp
- Garlic2 cloves, minced
- Red chili flakes1 tsp
- Red bell pepper1/4, finely diced
- Fresh mint leavesfor garnish
- Saltto taste
- Black pepperto taste

Season seabass fillets with salt and pepper. Dredge lightly in all-purpose flour.

Heat cooking oil in a non-stick pan over medium-high heat. Pan-sear the seabass fillets until golden brown and cooked through. Set aside.
