Bahan
- Mackerel (Ikan Tenggiri)500g
- Tamarind Paste3 tbsp
- Pre-made Sambal Tumis or Curry Paste2 tbsp
- Onion1 medium
- Garlic2 cloves
- Tomatoes1 medium
- Vegetable Oil1 tbsp
- Water150ml
- Saltto taste
- Sugar1 tsp
- Spring Onion (for garnish)1 stalk

Cut mackerel into pieces and season lightly with salt.

Heat oil in a pan. Sear mackerel pieces until lightly browned on both sides. Set aside.

In the same pan, sauté sliced onion and minced garlic until fragrant.

Add the sambal tumis or curry paste and cook for 1 minute.

Stir in tamarind paste, water, salt, and sugar. Bring to a simmer.

Add tomato wedges and return the seared mackerel to the pan. Simmer for 5-7 minutes until fish is cooked.

Garnish with chopped spring onions.
