- Belacan (shrimp paste)1 tsp
- Tomatoes1 medium
- Okra100g
- Pineapple chunks100g
- Asam keping (dried tamarind slices)2
- Water500ml
- Saltto taste
- Vegetable oil3 tbsp

Prepare the spice paste by blending soaked dried chilies, shallots, garlic, ginger, galangal, turmeric, lemongrass, and belacan.

Heat oil in a pot. Sauté the spice paste until fragrant and oil separates.

Add tamarind paste and water. Stir well and bring to a simmer.

Add mackerel fillets and asam keping. Simmer gently for about 10-15 minutes.

Add tomatoes, okra, and pineapple chunks. Cook for another 5-7 minutes until vegetables are tender and pineapple is heated through.
