    Rinse jasmine rice thoroughly. In a pot, combine rice, coconut milk, pandan leaves, and 1 tsp salt. Add water to reach the usual level for cooking rice. Cook until rice is done and fluffy.

    Prepare the sambal paste: Soak dried chilies in hot water until softened, then drain. Blend chilies with shallots, garlic, and belacan until smooth.

    Clean squid, cut into rings or pieces. Marinate with tamarind paste, sugar, and salt.

    Heat oil in a pan. Sauté the sambal paste until fragrant and oil separates. Add the marinated squid and cook until tender and the sauce thickens.

    Serve the fragrant coconut rice with the Sambal Sotong. Garnish with sliced hard-boiled eggs, fried anchovies, roasted peanuts, and cucumber slices.
