  • Jasmine rice2 cups
  • Coconut milk1 can (400ml)
  • Pandan leaves2
  • Saltto taste
  • Beef stew meat750g
  • Coconut milk1 can (400ml)
  • Pre-made rendang paste4 tbsp
  • Tamarind paste1 tbsp
  • Palm sugar1 tbsp
  • Kaffir lime leaves3
  • Hard-boiled eggs4
  • Fried anchovies (ikan bilis)1/4 cup
  • Roasted peanuts1/4 cup
  • Cucumber1/2
  • Sambal merahto serve

    Cook jasmine rice with coconut milk, pandan leaves, and salt.

    Cut beef into bite-sized pieces.

    In a pot, combine beef, pre-made rendang paste, coconut milk, tamarind paste, palm sugar, and kaffir lime leaves. Bring to a boil.

    Reduce heat and simmer, covered, until beef is tender, about 60-75 minutes. Stir occasionally.

    Season with salt to taste.

    Prepare accompaniments: slice hard-boiled eggs, have fried anchovies, roasted peanuts, and sliced cucumber ready.

    Serve the coconut rice with rendang, sambal, egg, anchovies, peanuts, and cucumber.
