- Anchovies (ikan bilis)1/2 cup
- Peanuts1/2 cup

- Sambal chili paste1/2 cup

Rinse jasmine rice thoroughly. Tie pandan leaves into a knot.

In a pot, combine rice, coconut milk, water, salt, and the knotted pandan leaves.

Cook the rice using a rice cooker or on the stovetop until fluffy and cooked through. Remove pandan leaves.

While rice cooks, fry anchovies and peanuts in hot oil until crispy. Drain on paper towels.

Boil eggs until hard-boiled, then peel and halve them.

Slice cucumber thinly.

Serve the fragrant pandan coconut rice with fried anchovies, peanuts, egg halves, cucumber slices, and a dollop of sambal chili paste.
